Avec une ouverture prochaine, le bar dansant BARBRA, situé au cœur de Bruxelles, recherche un(e) Responsable Cuisine motivé(e) !

Le Responsable cuisine a une énorme responsabilité; il coordonne, dirige et supervise l’ensemble de la cuisine et son équipe afin d’optimiser un service de grande qualité.

Rôle :

Création et renouvellement des cartes et menus.
Diriger l’équipe de cuisine en place et coordonner le travail de l’ensemble du personnel en poste.
Suivre et contrôler la mise en place du service et le bon déroulement de celui-ci dans le respect des règles d’hygiène et de qualité établies par l’établissement.
Gestion des stocks et des inventaires.
Organisation par poste
Définir et élaborer les procédures et modes opératoires, en fonction des normes professionnelles
Évaluer la charge de travail et organiser sa répartition en fonction du personnel disponible à chaque poste
Faire évoluer les collaborateurs en fonction de leurs aspirations, potentiels et compétences

Tâches :

Management, animation d’équipe

Animation de réunions pré et post service
Animer les équipes et maintenir la motivation
Application et contrôle de l’application des normes et règles d’hygiène et de sécurité (HACCP)
Identification des dysfonctionnements et mise en place d’actions correctives
Organisation du travail de l’équipe
Planification et gestion des effectifs par rapport à l’activité
Recueil des besoins en formation à transmettre au Responsable RH

Production culinaire

Réalisation de fiches techniques
Application et contrôle de l’application de la méthode HACCP
Élaboration de menus et cartes
Contrôle et fabrication des plats
Suivi et contrôle du bon déroulement du service
Vérification de la qualité des produits

Commercialisation

Présentation, valorisation des produits
Suivi et contrôle de la qualité de la prestation et de la satisfaction des clients

Opening soon, dancing bar BARBRA located in the heart of Brussels, is looking for a motivated Kitchen Manager!

The Kitchen Manager has a huge responsibility; he coordinates, directs and supervises the entire kitchen and its team in order to optimise a high quality service.

Role :

Creation and renewal of the menu
Lead the kitchen team and coordinate the work of all staff on duty.
Monitor and control the implementation of the service and its smooth running in compliance with the hygiene and quality rules established by the management.
Stock and inventory management.
Define and develop procedures and operating methods, according to professional standards
Evaluate the workload and organise its distribution according to the staff available at each position
Give employees opportunities according to their aspirations, potential and skills

Tasks :

Management, team building

Facilitation of briefings and debriefings
Animate teams and maintain motivation
Application and control of health and safety standards and rules (HACCP)
Identification of malfunctions and implementation of corrective actions
Optimise team work
Workforce scheduling
Analyse training needs and implement trainings in collaboration with the HR Manager

Culinary production

Creation of technical sheets
Application and control of the HACCP method
